Whole Wheat Banana Flax Muffins

I've been experimenting with ways to get heart-healthy flax into our diet. (and for any nursing moms out there, flax is one food that is supposed to boost the quality of your milk - I have noticed a difference!) This is an adaptation of a recipe on the back of the flax box - I increased the whole wheat flour, substituted bananas for apples, and added vanilla and nutmeg. My husband really likes these!

1/4 cup milled flax seed
1 cup whole wheat flour
1/2 cup white flour
1/2 cup sugar
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 egg, beaten
1 1/2 cups mashed bananas
2 T veg. oil
1/2 cup milk
1/2 cup chopped nuts
1 tsp vanilla
dash nutmeg

Blend dry ingredients in a bowl. Make a well in the center, and combine egg, vegetable oil, and milk. Stir until just blended. Fold in bananas and nuts. Fill well greased muffin cups or papers. Bake at 400* for 18-20 minutes or until muffin top springs back when touched. Yield: 12 muffins. You might want to double this recipe...

Sounds awesome, Jenny! I've been using a lot more whole wheat flour in my baking but haven't tried flax seed yet. I don't know much about it except that it's supposed to be really good for you. I'll definitely try these.

Think this would work if I substituted applesauce for the oil?

Make sure you get the milled flax seed - the whole flax seeds aren't as easily absorbed. About the substitution - flax is actually also a fat substitute. I thought about subbing applesauce as well, but figured maybe it needed the tiny bit of oil? Let me know how it turns out! I'd definitely be interested!

I want to try this recipe! I have made whole wheat muffins, and have also recently bought flax seed (I'll make sure it is milled before adding to this recipe).

Hello! I was googling for Flaxseed Banana Muffins and it went to your blog, so I thought I'd let you know that my roommate and I LOVE these muffins! They are awesome!!! Out of necessity, I substituted applesauce for half of the oil and then 1/4 cup of vanilla yogurt and 1/4 cup of soymilk and then used a natural sugar called sucanat...a grand experiment, and they still turned out great, so that's what I still do! Anyway, just wanted to drop a line to say hello and thanks for the great (and healthy) recipe! Krista Francis

This recipe is wonderful. I just made them into mini-muffins that I will put into my pre-schooler's lunch box. Very yummy as is!!! Thanks for posting this. I found it googling for a flax muffin recipe.

Wonderful recipe. Also found it with a Google search. I used almond milk, and reduced the sugar by 1/2, but added some agave which I've been experimenting with.

Just made these on Saturday and they turned out great. I added a little vanilla yogurt to the mix because my mix seemed a little too dry and they turned out awesome! Thanks for such a great recipe! (I was so happy to see a banana muffin recipe that didn't call for an entire stick of butter!) :-)

Very good! Found your recipe in a google search for banana flax muffins. I knew what I wanted to make but wanted to get the proportions right. These are perfect! Though I'd like to use more flax mixed with water and sub it for the oil next time and see how it turns out. Got to find every way I can to sneak nutrients into my picky kids...

Thank you for sharing your great recipe. The only change I made was to sprinkle some whole flax seeds on top before baking. My 3 yr old and I enjoyed making them together and eating them :)

I made these muffins today and added 1/2 cup of chocolate chips instead of the nuts. Absolutely delicious!! I can't wait til my roommate and boyfriend get home to try them (that way I won't be able to eat them all). Thank you for sharing :)

This is a yummy recipe!!!
I left out the nuts (I'm not a fan) and next time will try to sub out the oil with some apple sauce.

I just made these without the nuts or nutmeg (allergic) and substituted 1/2 the sugar with splenda blend brown sugar (proportionately). I threw in a tbsp cocoa powder on a whim, and they came out delicious!
